3 lbs. chicken thighs or pieces, skin removed if preferred
1 C soy sauce
1 C water
1/2 C brown sugar
2 stalks green onion
2 (1/2" thick) pieces of ginger, peeled
hard boiled eggs, peeled (optional)
4 carrots, peeled and coarsely chopped (optional)
In a large pot, mix the soy sauce, water, brown sugar, green onion, and ginger, and bring it to a boil. Taste it and add more soy sauce or sugar depending on your taste. Add chicken pieces and when it starts to boil turn the heat down to low or simmer. Cook for 2 hours. If you are using eggs and carrots, add them the last hour of cooking.

Thank you so much for these recipes. This looks really good! I actually tried out the fried rice, beef & broccoli, & the chong you bing. They were all awesome and I'll be making them again! I can't wait to try this one and the others.
