1 C flour
3/4 C warm water
1/4 tsp salt
filling:
1/4 C flour
1 Tbs oil
sesame oil
green onions, finely chopped
Dissolve the salt into the water and in a small bowl mix the flour and water to form a soft dough. If it is too sticky add a bit of oil.
For the filling, mix the flour and oil in a small bowl. Don't skip this! This mixture is what keeps it soft and flaky. This is the secret step that none of the other recipes out there include.
Divide the dough into 8 pieces. Keep the dough covered with a towel so they don't dry out.
With one piece, roll it out fairly thin (use oil on the counter and your rolling pin to keep the dough from sticking). Brush it with sesame oil and sprinkle some green onions and some of the flour & oil mixture evenly across the top. Roll the dough from the bottom side to the top and then roll into a spiral. Continue with the other pieces. Keep these pieces covered too (I took the towel off these to take the picture!).
Heat your nonstick (or cast iron) skillet to medium and coat lightly with oil. Take one piece of dough and roll it flat and try to get it as thin as possible without creating holes. I should have chopped my green onions more since there were holes galore! Fry the dough in the pan until it's golden brown on each side.
Eat these warm! I guess if you wanted to eat these with a sauce or something else you could but then they would get cold :)
