1/4 lb. beef (flank steak, sirloin, etc.)
1 tsp minced garlic
salt and pepper
1 tsp cornstarch
1 Tbs soy sauce

2 broccoli crowns
1/2 or whole onion

sauce (mostly guesstimates, sorry!):
3 Tbs soy sauce
2 Tbs oyster sauce
4 Tbs water
1 tsp cornstarch

Slice your meat across the grain and place it in a small bowl.  Add garlic, salt, pepper, cornstarch, and soy sauce to the meat, mix, and let it sit while you prepare everything else.

Wash and cut the broccoli into bite sized pieces.  (Here comes the unconventional part) Place it in a microwavable container (I actually use this container as the serving dish), add a couple tablespoons of water, cover, and microwave for 2-3 minutes.  Slice the onion. Feel free to add other vegetables too.  Sometimes I add carrot slices (which can be microwaved with the broccoli) or baby corn from a can is requested a lot.

Prepare the sauce by mixing all the sauce ingredients together.  Definitely double this if you like lots of sauce.  The sauce will look cloudy, but don't worry it will be clear after it's thickened.

So, here comes the cooking part...are you ready? :)  It goes really fast so that's why it's best to have everything ready to go before you begin.  When you're mixing the sauce you can turn the burner to high (or medium high if you're not used to working on high).  Also, make sure you're using a really good nonstick pan.

My stir fry cooking method:

Add a bit of oil (tablespoon or so) to the pan and add the meat.  You want a good sear on the meat so don't stir right away, but once the meat has a good sear on both sides remove it from the pan.  Add a bit of oil and a bit of garlic and the onions and cook until the onions are mostly cooked.  Then add the broccoli and stir for a minute (since they are already cooked you're really just stirring to combine the flavors).  Remove the vegetables from the pan into a serving dish.  Add the sauce and stir until it gets glossy and coats the back of the spoon (kind of like thin gravy).  Add some water if it gets too thick or create a cornstarch and water slurry if it isn't thick enough.  You might want to taste it to see if it needs more soy sauce.  Add the meat and the vegetables back in and stir to combine and pour everything back into the serving dish.
