Fried Rice
serves 4

1 egg
Meat (ham, spam, ground beef, chicken, chinese sausage)
2 C frozen vegetables or other leftover vegetables
2 - 3 C leftover cooked rice
Soy sauce
Salt and Pepper
Oil

Beat the egg and add salt and pepper.  In a large nonstick pan or skillet, fry the scrambled eggs and remove from the pan. 

Turn the stove to medium high and add a tablespoon of oil and fry the meat.  After the meat has cooked add the frozen vegetables and cook until the vegetables are cooked.  There should be no water in the pan and the vegetables should be fully cooked and not soggy. 

Add some soy sauce to the pan and a bit more oil and add the rice.  Stir and break up the rice and cook until the rice is cooked.  If you have a good nonstick pan it shouldn't stick to the bottom at all.  Add the eggs back in and add soy sauce, salt, and pepper to taste.
