2 1/2 tsp yeast
2 C lukewarm milk
4 eggs, separated
1 tsp vanilla
2 1/2 C flour, sifted
1/2 tsp salt
1 Tbs sugar
1/4 C melted butter

1.  Sprinkle yeast over warm milk; stir to dissolve.

2.  Beat the egg yolks and add to yeast mixture along with vanilla.

3.  Blend together the flour, salt, and sugar; add to liquid ingredients. 

4.  Stir in the melted butter and combine well.

5.  Beat the egg whites until stiff but not dry.

6.  Carefully fold beaten egg whites into batter and let the mixture stand in a warm place for about 30 minutes or until it doubles in bulk.

7.  Preheat your waffle maker and make your waffles.

Serve with your favorite toppings.  Our favorites include fresh strawberries, defrosted mixed berries mixed with sugar, maple syrup, nutella, peanut butter and bananas, maple syrup, and don't forget the whipped cream.

We have a cheap round Toastmaster Belgian waffle maker from Walmart.  According to Alton Brown, the round shape helps the waffle to cook evenly.  This recipe makes 8 waffles.  We obviously can't eat all 8 so we freeze the extras separating them with waxed paper for another quick meal.  They defrost and toast up perfectly.

Warning: You will never want to make waffles using the mix you buy at the store (ever again).
